Tofu “Egg” Salad

Tofu Egg Salad

I obtained this recipe from Healthy. Happy. Life. If you’re a fan of recipes with hard boiled eggs, this will certainly give you a double take! …

  • 1 package of extra firm tofu
  • 1/2 cup vegan mayo
  • 1/3 cup Dijon mustard (Grey Poupon)
  • 1/2 tsp celery seed
  • 1/2 tsp garlic powder
  • dash of cayenne powder
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp maple syrup
  • 1/2 cup chopped scallions
  • 1/2 cup chopped celery
  • 2 tbsp nutritional yeast
  • 2 tbsp apple cider vinegar
  • Prep veggies, dry and cube tofu – toss in large bowl.
  • Combine/whisk dressing and add to large bowl.
  • Toss well.
  • Chill until ready to serve!

I used a bit of variations for this recipe. I’m not a big fan of super spicy foods, so I feared the cayenne powder and Grey Poupon would be too much for my taste buds! Replacing the Dijon mustard for just regular yellow mustard would help level off any spicy flavors.  I also decided to use freshly diced garlic in place of the garlic powder. The apple cider vinegar (which is optional in the original recipe) was a great touch – but I do think that 2 tbsp gave it a bit of a bite. Next time I will be using only 1 tbsp of the vinegar, perhaps using 2 tsp of maple syrup instead! The consistency is ideal on a sandwich, on a bed of lettuce, or just standalone!
