This was a recipe in my 1,000 Vegetarian Recipes cookbook that my dear late Great Grandma gave to me.
- 1 1/4 cup water
- 3/4 cup unsweetened coconut milk
- 1 cup long-grain white rice
- Salt, to taste
- In a saucepan, bring the water and coconut milk to a boil.
- Add the rice and return to a boil. Reduce heat and simmer, covered, 15-25 minutes or until the liquid is absorbed.
- Stir in the salt.
This was an amazingly easy recipe and had such a unique and fresh taste! I had a hard time finding the coconut milk at the grocery store until I realized it was a common ingredient for a lot of Asian foods – so look in the ethnic foods section for a can! I personally prefer more of a coconut taste, so I did switch the original recipe above to just 1 cup of water and 1 cup of coconut milk. Or for a sweeter taste try using the above recipe and stir in 2 tablespoons of firmly packed brown sugar.
For a complete meal with this rice, I simply fried up some vegan dumplings and zucchini!
