I’m rather excited about pitas this week, so here is another quick and simple meal! I enjoyed this for dinner and will be using the leftovers for lunch tomorrow, as it’s very easy to bring to work.

If you’re ever in South Eastern Connecticut I would highly recommend going to Kong Foo in Norwich – they offer a fantastic array of both vegetarian and vegan cuisine.
